Ginisang Ampalaya (Sauteed Bitter Melon)
Assalaamu alaikum warahmatullaah,
Dad was just recently diagnosed with Diabetes and it runs in the family both mum and dad’s side. My dad’s late aunt and uncle got their legs amputated (may Allaah subhanahu wa ta’ala have mercy on them Aameen). Alhamdulillaah my dad is not that hard-headed and he started eating the right food.
Ampalaya or bitter melon in English is known to be good for diabetic people. Here’s what dad had for lunch today.
In this recipe, I used Olive oil instead of regular cooking oil ’cause my dad also has hypertension and cholesterol problems.
Some people used the ready ampalaya mix but I don’t recommend that ’cause it’s filled with monosodium glutamate and that’s not healthy.
*edited* Also some people by the way soak the ampalaya in a bowl of water and squeeze em to remove the bitter taste to it BUT I don’t do that. My mum said it takes away or lessens the extracts which has a lot of nutrients in it.
As for my lunch, I haven’t eaten yet. Inshaa’Allaah in 30mins. I’ll be making the Shepherd’s Pie so watch out for it.
INGREDIENTS:
1 Medium sized Ampalaya or Bitter Melon
2 chicken eggs
1 finely chopped onion
3 minced garlic cloves
1 finely chopped tomato (optional)
Salt and pepper to taste
Olive oil for saute
DIRECTIONS:
* Pre-heat oil for 2mins while you eat the eggs with a fork in a bowl.
* Saute garlic then onions then the tomato then the Ampalaya.
* Pour the beated eggs while continuously mixing the vegetable until eggs are cooked.
* Salt n pepper to taste.
